Officially born in 2009, with the signing of the statute of the association “Agricoltori Custodi della Comunità del Cibo a Energie Rinnovabili della Toscana”, thanks to an agreement between Slow Food Toscana, Slow Food Foundation for Biodiversity and CoSviG, the Consortium for Development of the Geothermal Areas, a public-sector body, which has been operating for many years in the field of promotion and implementation of initiatives consistent with programs for the sustainable development of geothermal territories and the entire Region of Tuscany.

It comes to life in Tuscany in the District of Renewable Energies, territory straddling the provinces of Pisa, Siena and Grosseto (the so-called "traditional geothermal area"), where, since the early 1900s, the geothermal resource for industrial production is used. of electricity.

It is part of Terra Madre and is the first world community of food with clean and renewable energy that operates in the agri-food sector and which insists on production methods as well as products, and is made up of entrepreneurs who have as priority that of environmental sustainability.

It is currently expanding throughout the Tuscan territory.

The Comunità del Cibo has won important awards such as the Premio Expo 2015 "buone pratiche agricole" della Regione Toscana, the Premio Eco and the City "Giovanni Spadolini" 2012  and the reporting to the Premio per lo Sviluppo Sostenibile 2014.
